Week 49: Keeping Warm and Bubbly

What's new?
A little, local craft brew tasting of FreeState ales (Lawrence, KS), perhaps? New artwork from an AMAZING (somewhat local) photographer that I stalked found on Etsy? Maybe a delicious new chicken tortilla soup crockpot recipe. Week 49 was all dangerous. That's right, folks. We like to live on the edge. As I find myself smack-dab in the middle of replacing light bulbs, cleaning fan blades, and scrubbing baseboards for our pre move-out special/ my-son-is-napping-so-must-take-full-advantage-of-this-time, I will leave it at this:

1. I have 2 friends here who wanted to commemorate their time in Kansas with some form of bison art, and I loved that idea. In my search of Midwest photographers, I found this extremely talented, Iowa native on Etsy. Please check out Scott Fairbairn Photography, should you have the time. The photo in the top left of my new things collage is a photo of his photo, which I plan on framing and find particularly stunning. I love these creatures, but this photo captured such a beautiful moment of pure texture and humility. 

2. FreeState! Ad Astra is a gorgeous, rich amber ale that I think my husband is going to fall in love with when he gets home and tries this! Unfortunately, I can only find this in a sampler pack. I would love it if I could just purchase the Ad Astra! Copperhead Pale Ale...well, friends, as I have mentioned before on this blog, I am not a fan of hoppy beers. This wasn't too obnoxiously-hoppy, but one was enough and the other 2 in the pack are going to my neighbor. And there you have it: My ultra-sophisticated tasting notes. Try to control your excitement. One item of interest is that Lawrence is only 45 minutes east and south of Fort Leavenworth, and FreeState was the first legal brewery in the State of Kansas.

3. Crockpot Chicken Tortilla Soup recipe...so my friend Adrian shared this recipe with me but did not provide a source. I am not sure if this is her original or not, but it was delicious!! I made quite a few changes only because I am trying to use up the stuff in my freezer/cupboard before we move! My recipe tweaks are in (italics).

Chicken Tortilla Soup (for crockpot)
2-3 chicken breasts (used 3 turkey burger patties)
2 cans black beans
2 cans stewed tomatoes (used 2 cups fresh tomatoes)
1 can green chiles (used 1 bottle of sweet chili sauce)
1 C salsa (omitted)
1 15 oz can tomato sauce
1 C frozen corn
1-2 garlic cloves (used 5)
1/2 TBS chili powder
1/2 onion, chopped (did not have onion, but added 2 cups carrots, which is totally the same)
2 TBS lemon juice
1 1/2 tsp cumin (used about 4 TBS because I love cumin so much I want to marry it)
(also added 4 C chicken broth, and lots of black pepper)

Put all ingredients in crockpot (I did mine on the high setting) for 5-6 hours. Break up meat with a fork (I chopped mine) before serving. Add tortilla chips, shredded cheese, sour cream, and/or cilantro to each bowl before serving.

Week 36: The Kindness of People, The Mush of My Brain

What's new?
Week 36 was a pretty great week, all around. That said, today was a tough one in a day-in-the-solo-life with my growing, glowing, almost-3-year-old. My brain is mush. I cannot even fake my way through this post with an attempt at some humor or ultra-fake-facebook-sounding BS about how we should all appreciate this time because it goes by so quickly. You know what? Right now, in this moment, I am proud to say that I do not appreciate it, and I can't wait until I no longer have to repeat, "please use your words, mommy can't understand you when you whine," 5,000 times a day. THERE. I said it. GASP. Now go find some sugary little Instagram quote to help you feel better. No wait. I already did that :) Don't worry, it is possible that I will delete this horridly grouchmo post and re-post a new, cheerful one when I wake up in the morning...Namaste, friends.

Week 36 Newness:
  • The Sweetest Gift - A friend of a friend, whom we met ONCE, made Henry the most beautiful, random, adorable dinosaur quilt. I was so overwhelmingly blessed by this kind gesture, and Henry loved it so much that he danced on it and rolled around on it for days. Some people are so talented in this world! I love homemade.
  • New Restaurants - As I mentioned last week, my Father-in-Law was here visiting. The man loves and appreciates food as much as I do (he did not pass this on to his son or to his grandson, which is probably good, or I would weigh 400 lbs, easy). We ate out a LOT and enjoyed every moment! Two new local places we tried were Osaka Sushi in Leavenworth (just outside of the main gate), and Panchos in Parkville, MO. I am so sad that I waited 1.5 years to try Osaka. See what being a food snob gets you? Nothing. It was delicious, and though I do not recommend eating there (kind of ghetto), the food was amazing, and it will be on the take-out menu often. Panchos was so fun! An old house, situated between a boxcar and a caboose. The food was good-enough-Mexican food. Having lived in San Diego, I am kind of still a Mexican food snob, but it was good! Well worth the trip, and if you have a kid who is obsessed with trains, it is a must. You get to sit inside of a traincar with a view of the real train that runs through Parkville. I heart Parkville.
  • Friend Dating - While I am sure they are never going to call us back (today, the horrible, no-good, very bad day of which I spoke earlier, was our date day), I enjoyed spending some time with a very interesting, nice, patient woman and her sweet son from Henry's preschool, today. This woman was a good sport. Sooo kind. That is all.
  • New Pet - Remember the little teddy bear hamster that we babysat for 6 weeks back in June/July? Well it turns out the parents of the little girl who owned him were looking to re-home this little critter, and we just fell in love with it. The little girl who previously owned him named him "Leah" and her mom suggested we change his name :) But Henry already knows "Leah" and thinks every animal slightly resembling a rodent is "like Leah", so, "Leah" stays. Him-Her.

Week 32: Beginnings of a Thunderstorm

What's new?
Week 32 brought with it so much 2.5-year old. This boy! I have never seen such a willfull, stubborn, independent little person in my entire life. It is apparently, time for pre-school. SO much Henry newness...He now says "Bless You" when someone sneezes. He walks by himself into the post office (not in the stroller) and most other public places. He drinks water because I have convinced him "that's what big boys do." He rips child safety mechanisms off of doors. He quotes books. He washes himself. He lets me know which music he likes and wants to know who the artist is...What happened to that baby I just had?! Who is this little man-cub? :) 

One of my girlfriends has a son who is in his early 20's. She was almost in tears the other day as she told me the story about how he broke up with his serious girlfriend (who had been so serious she was in family photos) whom they had all fallen in love with. The reasons he gave his mom, my friend, were not (as a momma) ones that you want to hear from your son, the one you raised to be a stand-up guy. Mom was extremely disappointed in his decision and trying hard to be supportive of him and be the good listener that she is. The fact of the matter was that her son is not ready for a serious, grown-up relationship. Growing pains - do they ever end? :)

Other Week 32 Newness:
  • Red Barn Pickled Asparagus. Mom got this for me (I love pickled asparagus!) while she was here and we were visiting our local Red Barn Farms out in Weston, MO. I paired it with Absolut Peppar and a little Mrs. T's and a sprig of celery :) Basically, a delicious little salad.
  • Learned how to align my BOB SUS thanks to my amazing neighbors who fixed it for me (it had been pulling very hard to the left). Basically it was like someone wrapped my sprained ankle. Lifesaver. By the way, having smart, kind, intuitive neighbors who recognize that running outside is your sanity is going on my list of deployment musts.
  • Cookies fail! Yes - I am publishing a fail. You cannot substitute Sunbutter for peanut butter in cookie recipes, apparently. If anyone out there has successfully done this, please let me know how you did it.
  • Sharkbait #3. Yes. Yep. Youbetcha. I think I traumatize my Betas when I go on vacation. This little guy seems pretty feisty, and I am trying him with no tank heater, this time around. I am pulling for ya, Buddy!
  • New workout! The 10-minute body-weight workout (August 2013 issue) from Women's Running Magazine, a great, digital publication has been a wonderful supplement to my runs lately. The body-weight exercises include alternating lateral lunges, squat thrusts, the inchworm, and mountain climbers. The exercises are done for 20 seconds with a 20 second rest in between, for 10 minutes. Love this one!

Week 31: An Old Woman Lives in My Bones

What's New?
Most of Week 31 was spent taking a large, deep, relaxing breath, enjoying the presence of family, who played with, cuddled with, read to, built things with, pretended with, ran with, and chased after their 2.5-year old cousin/nephew/grandson. It was GLORIOUS, my friends. While this, in itself is not new, it had been a year since we made the trek up to see everyone; enough time to get homesick as hell. I never thought I would be one of those people who only saw their family once or twice per year, and I have never quite become used to it. One day, I will be back, and until then, there is a whole wide world to explore, scattering pieces of my glow-in-the-dark heart as I go.  

Week 31 newness:
  • Pinchknitter Yarn! My family lives in the Camano/Stanwood, WA area, and I just now noticed this sweet little specialty yarn shoppe in Stanwood! I spoke with June for a while about their products, and she explained why bamboo textiles are actually horrible for the environment, while hemp is truly environmentally friendly. They have a TON of alpaca wool and a beautiful assortment of wool in general. I can't wait to visit this place in November when we return!
  • Gooseberry Patch Freezer Recipes - I am LOVING this life-changing compilation of the art and science of freezing food. The recipes are quite fattening, I won't lie, but for whatever reason, I lose and maintain my weight MUCH easier when I eat 2-3 hearty "meat-and-potatoes" meals a day rather than snacking all day on low-calorie stuff. Casseroles and hearty stews? There goes 5 lbs. No joke. And eating this way enables me to run to my heart's content without becoming anemic or waking up at night with dumb leg cramps. There is your weight-loss lesson of the day. The bestest part about this little book though are the little tips and explanations about proper freeze/thaw techniques. A deployment MUST.      
  • BABY!! SIL #3, Whitney, will soon be poppin' out a brand-new baby bee, and we very much enjoyed spending time with this new-momma-to-be at her shower. She is one hard-working woman, and we love her like crazy.
  • New art (here are some photos of the new art mom brought last week). "Housetree" by Swedish artist, Mattias Adolfsson. I love his creatures and sketches as much as Hayao Miyazaki's.

Specialty yarn shoppes and and freezer recipes, goodness gracious, you'd think an 80-year old woman wrote this post! Well, maybe she did. So, in honor of all of our inner old souls, here is new poem:

An old woman lives in my bones.
She smacks her lips and clinks
her teeth against glass jars of whiskey.
Sipping, slurping, rocking.
Creaky wooden chair of 
cracks and fissures,
Rivers of time,
mapping the loves of her soul.
She clicks her tongue with closed eyes

Week 26: Climbing Mountains and the BEST Foodie Penpal, Ever

What's new?
Week 26 was full of mostly deliciousness and a smidgeon of growing pain. In addition, I have had the worst bout of insomnia for the last few days (who knows), so please bare with me as I typo my way through this post and regale you all with the Newness.
  • My Foodie Penpal package arrived!! Oh my goodness - A huge, cyber-hug and a thank-you to the beautiful and thoughtful Laura (and please check out her website, Urban Starlings!). As I opened her package, I LOVED how each item was individually wrapped. Each totally non-fat item :) Yum. First of all, the Sahalie Tuscan almonds were devoured within 2 days of opening. Second, dry Italian salame. The end. But not really...Sonoma Jacks soft cheese wedges and coffee candies. Cheese straws. SWEET note. What it was, was a celebration in a package. 
  • La Croix sparkling water. The grapefruit is my favorite, but I also gave the cran-raspberry a try this week. Not only does this beverage seem like such a splurge (is it because it comes in a can???), but it has no sodium, artificial color, flavor, or sweetener. When it is 88 degrees out, and you just finish a 5 mile run pushing your 35-pound son in the jogging stroller up a hill, those little, mini (but HEALTHY) splurges in life sure are welcome! And they will not give you a beer belly or digestive disorders (diet soda) :)
  • My little Love is going to preschool. We toured the facility and signed him up, and boy has that experience elicited some major growing pains in this momma. On one hand, I have never been more excited for him to begin this (what I think will be a) wonderful experience. His teacher seems so amazing in all of the ways that I need his first teacher to be. He loved her (in fact, he keeps asking to go back and see her!). She reminds me of my Sister-in Law, Whitney's mom. Not super gushy or emotional, but sweet and caring. I think maybe a little bit of a control freak, which I liked. I think Henry will challenge her, but I think she can challenge him right back, in a loving but firm way. I am so happy that he will get structured, quality time with other kids learning about things like following directions, manners, trusting and (hopefully) bonding with other adults, and working as a group. On the other hand, I feel nervous. Since birth, the most we have ever been apart with him in someones care other than my husband is 4 hours, and that maybe happens once every 3-4 months. And usually it is no more than 2 hours :) I am extremely picky about who cares for him. For example, I would never in a million years do something like Sitter City. I would have all of the teeth rot out of my head and bleed to death before I ever, ever, ever did that. I know it is time to climb this mountain, and I sincerely believe that there will be a happy little boy at the top. Ted has been such an amazing husband listening to me freak out about all of this, even on deployment. I sure do miss his cool, calm and collected physical presence during times like this. I'm pretty sure Henry does too :)    
  • A new recipe, which I super-modified from this month's issue of Southern Living, from a recipe called Chicken Salad Exotique. This is SO yummy and easy to make! I am completely, 100% obsessed with this kind of old-school chicken salad recipe:
1 baked chicken breast, cut up into small squares
1/2 cup of organic red grapes, halved
1/2 cup unsalted, roasted almonds, chopped
1/4 cup chopped red onion
1/4 cup mayo
1 tsp oregano
a dash of salt and pepper

Week 23: The Good Graces of Time

What's New?
Dear Week 23, 
You were not an easy week, but within the good graces of your time, we have learned much about the amazing strength of our little boy. Please tell future weeks to go easy on this momma, lest I forget what I have learned about my 2.5-year old during this time :) And please, please remember: I am only a Padawon in all of this. There is still so much to learn in order to be a Jedi Master deployment momma, and I am not always 100% sure if want to be, for that matter.

Ted left at the end of last week, after only having been here a week, and each day since has been a parenting adventure trying to explain that each light left on in another room does not mean that daddy is home. Every time a car goes by or a male runner passes us on the trail, that is not daddy either. Daddy is on a ship in the ocean. He is probably having coffee with Nemo. He is protecting people from sharks, so the sharks don't bite them and make a big, giant, owie. 

Sometimes, distraction seems like the best thing, and other times, just talking about it really matter-of-factly is good. Still, most times, a big hug and a kiss and a good, long walk is the best thing. I find that if I let him lead with all of this, he usually works through it using his own little brain. Yesterday, I heard him upstairs get out of bed during his nap and go into mom and daddy's room. He was just sitting in a chair we have up there going, "daddy's room. this is daddy's room," very definitively. That must have brought his little heart some peace because then he ran into room and took a nap :)

Thankfully, one of my good friends brought over a couple of books for us to look at, which ended up being so great (and we ordered our own copies). He LOVES Over There (by Dorinda Williams). It has some very simple illustrations and is action-oriented (i.e. "I brush my teeth here. He [Daddy] brushes his teeth there." Just really could not be any more perfect for Henry! We have also enjoyed the activity book (created by Julie LaBelle) and have already completed our first deployment time capsule. There are cute ideas in there befitting for a 2-3 year old, such as connect the dots (and it is a Navy ship). 

My mom also sent a U.S. Navy Alphabet book, which I had never seen. Not only does Henry love this, but as a terrible Navy wife, I have learned more from this book about the Navy than I have ever known! :) This book should be given to every new Navy spouse. "V is for vessel" people! 

Another great "resource" has been just simple prayer!  Every adventurer's pathway calls for meditation and prayer at some point, and we do this often. Not only has it been a great bonding time for us, but I think to teach our kids to rest and be still in the small spaces of the day, amid the running around and endless structure or lack thereof, in many cases, is teaching them how to use a tool for real happiness. We are the praying type, and we believe prayer works, but even if you are not, teaching your kids to just count to 10 and take a deep breath every once in a while is a good thing in this World.

Going beetle and spider hunting and playing puzzles. Making chocolate chip cookies and raisin trains. These are the things that make us both happy turtles. So that's what we are doing, for now.

Other Week 23 Newness:
  • Finally got my dream kitchen tool (besides the Kitchenaid pasta maker attachment)! A rice cooker/food steamer with a timer. This thing has been LIFE CHANGING. It has a white and brown rice setting, but you can also cook quinoa, lentils, or just about anything in half the time. I am eating a ton more vegetables with the steamer - and I just love it. Now if I could just get Henry to eat this stuff :)
  • Henry did his first bird call: the California Quail. Yes, I was beside myself with glee.
  • I signed up for a Foodie Pen Pal! Doesn't that sound exciting?? It was created by a dietician whose blog I came across via a gal who I sometimes get Weight Watchers recipes from. Check it out!! The Lean Green Bean
